Missed Me?

Yes. I went AWOL for a while there. I've just had a LOT going on lately, and I think I finally ran out of steam. That and for the past week or so I've been fiddling with the settings on "this here" blog because of problems from way back here and here and because I was noticing my blog looked different on different monitors (when I'd visit other computers). And I wasn't sure why. (Still not.) Anyway, I decided to sort of start over. Hence, the "new look." I'm not sure whether or not I'll keep it this way, but it's fine for now. I do miss my purple. So we'll see.

All this technical stuff is lots of fun for me (I'm serious)...WHEN I don't need to be doing other stuff. Like parenting. Or housekeeping. You know. Life. In fact, it may be this time next year before I get the layout right. Ha!

I'll try to use the next several posts to update y'all on all the Davidson goings-on. There were birthday parties and soccer games and, well, general craziness. In other words, plenty to blog about. *grin* I'll try to do better about getting stuff on here. After all, it IS the only way I currently have of documenting our lives so that I (we?) can remember later the things we are experiencing right now--considering the alarming rate at which I am killing my brain cells from sleep deprivation.

Okay. That said, I will leave you with a quick idea for lunch. One of our family faves. It's my very own spin on the classic grilled cheese sandwich.

First, soften some cream cheese and spread it on one slice of whole wheat bread. Place on cookie sheet. Then sprinkle with shredded cheddar, shredded mozzarella, and crumbled feta cheeses.


Butter another piece of bread and place alongside the cheesy one. Put in oven under the broiler until cheese is starting to melt and the buttered bread is toasted. Then place the toasted bread on top of the cheesy one to make a sandwich. Flip and add butter to other side of sandwich. Place under broiler once more until toasted. (This works just as well on a griddle, in case you'd rather not heat up your oven and listen to the fan run for an hour afterwards!)


Voila! I call it Four-Cheese Toasted. (How creative is that??!) Just a regular grilled cheese--only without the grill...and with much yummier cheeses. I mean, how can you go wrong with cream cheese and feta involved? Right?

  1. Micah loves his Toasted Three-Cheese sandwich! :) I never have feta on hand...not a staple at our house. :)

  2. I do em in the toaster oven. Just put cheese on top of two slices of bread, toast, then put em together. My kids don't even miss the butter. Apparently that is the way David always had them as a kid so I took up on that much easier method! Not even a pan to clean!

    Good to see what ya'll are up to. I have enjoyed blogging. You are right...it is a great, easy way to document your life...b/c we all know too well that those photo albums are just waiting patiently for hard copy photos:)
